Notre bi\u00e8re \u00ab\u00a0L’Originel\u00a0\u00bb :<\/span><\/p>

Notre gamme de bi\u00e8re locale L’Originel est r\u00e9alis\u00e9e dans un atelier \u00e0 taille humaine et \u00e9labor\u00e9e suivant nos propres recettes inspir\u00e9es des traditions brassicoles. Afin d\u2019en conserver toutes leurs qualit\u00e9s, nos bi\u00e8res ne sont pas filtr\u00e9es, ni pasteuris\u00e9es. La cr\u00e9ation des bulles\/mousse se fait en bouteille, naturellement, suivant un proc\u00e9d\u00e9 de refermentation ancien de plusieurs si\u00e8cles. La trace de d\u00e9p\u00f4t en fond de bouteille en est le t\u00e9moignage, gage de qualit\u00e9 et du respect de la tradition brassicole.<\/span><\/p>

Nous travaillons exclusivement avec des malts de fourniture locale. Notre fabrication sur des unit\u00e9s de petite taille nous garantit une bonne ma\u00eetrise de la qualit\u00e9 de nos produits et des consommations (eau et combustible). Nos r\u00e9sidus de brassage (c\u00e9r\u00e9ales) sont valoris\u00e9s dans la fabrication de Crackers Ap\u00e9ritif. Dans l\u2019objectif de renforcer notre pr\u00e9sence dans le circuit court ainsi que la qualit\u00e9 de nos produits, nous avons \u00e9labor\u00e9 en partenariat avec des agriculteurs locaux, l\u2019implantation d\u2019une houblonni\u00e8re sur sol vivant \u00e0 proximit\u00e9 de nos ateliers de transformation. Notre engagement est de maitriser notre emprunte environnementale, de tendre vers une neutralit\u00e9, tout en vous garantissant, pr\u00e8s de chez vous, l\u2019acc\u00e8s \u00e0 des produits artisanaux de qualit\u00e9.<\/span><\/p>

Nos P\u00e2tes Artisanales<\/span><\/p>

\u00a0<\/span>Le go\u00fbt unique de nos p\u00e2tes trouve son origine dans les ingr\u00e9dients de qualit\u00e9 faible en gluten, qui entrent dans la composition de sa recette, mais aussi dans les m\u00e9thodes de fabrication artisanales que nous mettons en \u0153uvre. Le bl\u00e9 tendre de vari\u00e9t\u00e9 ancienne \u00ab barbu du Roussillon \u00bb, cultiv\u00e9 sur la plaine de la Catalogne nord, est transform\u00e9 en farine par des moulins \u00e0 meules de pierre. Cette technique permet de \u00ab d\u00e9rouler \u00bb le grain sans le broyer afin d\u2019en extraire tous les ar\u00f4mes. Elles sont ensuite form\u00e9es \u00e0 travers un moule en bronze (le top du top selon les italiens), puis s\u00e9ch\u00e9es \u00e0 basse temp\u00e9rature dans notre s\u00e9choir. Ces choix nous permettent de vous garantir leurs bonnes qualit\u00e9s alimentaires et gustatives.\u00a0<\/span><\/p>

La couleur brune et leur petit go\u00fbt noisette, sont des qualit\u00e9s cl\u00e9s qui caract\u00e9risent nos p\u00e2tes artisanales.
